Ingredients
  • 2cups whole wheat flour
  • 1cup plain flour
  • 1.5cup grated carrot
  • 1cup Water
  • ½cup maple syrup
  • 3tbsp coconut oilmelted
  • 2tbsp chia
  • 2tsp baking soda
  • 2tsp apple cider vinegar
  • 2tsp ground cinnamon
  • ½tsp ground ginger
  • ½cup walnuts
  • 1pinch Salt
Instructions
  1. In a large bowl, combine the carrot, chia, maple syrup, water, baking soda, coconut oil and apple cider vinegar, and stir well.
  2. On medium heat, roast the walnuts.
  3. One by one, slowly fold in all other ingredients, including half of the walnuts.
  4. Once combined, pour the mixture into a tin of your choice and place the walnuts on top, gently pressing them into the mixture.
  5. Bake your cake in a preheated oven at 180 degrees Celsius for 30-45 minutes (depending on your oven and the shape of your cake tin.
  6. Allow the cake to cool completely before enjoying a slice.
